Gravity-fed harvesting, gentle pressing, native yeasts, and aging in tanks—everything is done (and done very well) to preserve the Pinot’s pure fruit character. The nose? A rainbow: flowers (peony, iris) followed by fruit (cherry, raspberry), a hint of pepper, and a pinch of aromatic herbs (licorice). A pleasant sweetness coats a supple palate that doesn’t overpower, but rather highlights the finesse of the tannins, the freshness of the fruit, and the smoothness of the texture. About the estate:
Descended from a long line of winemakers who have been based in Menetou-Salon since the 16th century, Antoine de la Farge—an agricultural engineer and oenologist—joined the Domaine de l'Ermitage in 2013, which was founded by his parents (since renamed Dom. de la Fidélité and now farmed organically). At the same time, he established his own wine merchant business, which specializes in the Central Loire appellations (Menetou-Salon, Sancerre, and Pouilly-Fumé). Since 2019, he has also managed Dom. Chavet (Menetou-Salon).
