Eric Bordelet
Eric Bordelet, a trained sommelier ( ), has been a "pomologist and poirologist" since 1992. He tends to a 19-hectare orchard on the schist and granite terrain of the Armorican Massif in southern Normandy. The trees, ranging in age from 40 to 100 years (and even 300 years for some), produce some sixty different varieties of apples and pears.
The orchard is maintained using the most natural methods possible, in accordance with biodynamic principles. Harvesting is done by hand and selectively, based on the fruit’s ripeness and variety. This raw material of exceptional quality allows Eric Bordelet to craft “Haute Couture” ciders and perries that are both traditional and authentic.
