Stored for 5 days in the cellar after harvest, followed by fermentation in temperature-controlled stainless steel tanks using cultured yeasts; the fermenting must was punched down by hand up to six times a day at the peak of fermentation, then pressed and racked off the lees, and finally transferred to barrels for aging

Aged for 10 months in new French oak barrels (28%) and older 225-liter oak barrels, on the lees
