Pneumatic pressing. Selection of the first pressings, followed by cold settling. Temperature-controlled fermentation (16–18°C). Roussanne and Grenache Blanc are aged in new and one-year-old barrels, with the remainder in stainless steel tanks. No malolactic fermentation

Aged for 9 months in barrels, on the lees with regular stirring

The estate traces its origins to the union of two long-established families from Castelpapal, the Establets and the Jeunes. A large “tina” (cellar or barrel) was built there on three levels, reflecting the 72 hectares of vineyards on the current property, which was established in 1972.
