Traditionally, the different grape varieties are vinified separately and the harvest is destemmed and crushed in its entirety. Long vatting.

Livestock farming

The Syrah and Grenache grapes are aged separately for 10 months in large oak vats, demi-muids, and barrels. The final blend is determined and carried out just before bottling.

About the estate:

The estate was founded by the union of two old Castelpapal families, the Establets and the Jeunes. A vast "tina" (cellar or barrel) was built on three levels, in keeping with the 72 hectares of vineyards on the current property, which was created in 1972.
