Destemming, crushing, then transfer to concrete vats maintained at 22°C then 25/27°C, indigenous yeast, total maceration for approximately 20/24 days with daily punching down and racking 4 times a week during fermentation, daily stirring during the subsequent maceration phase, devatting, pneumatic pressing, two rackings within the following three days, malolactic fermentation, rackings, then blending.

Aged in concrete tanks for 14/16 months, then lightly filtered and bottled.

Beautiful intense garnet color with brilliant highlights

Nose

Rich, with beautiful notes of fresh red fruit and morello cherry, blended with spicy notes of clove, as well as notes of garrigue and thyme.

Mouth

Ample, the tannins are mellow and round, accompanying a fleshy and rich mid-palate; the finish is persistent, with notes of sweet spices and red fruits.
