Wine Making

In the first year, the grapes used for Armagnac are harvested and distilled (only the white grape varieties) in inert stainless-steel tanks for 12 months. In the second year, the white grape varieties (for white Floc; red for rosé Floc) are harvested and pressed, and the musts are poured into tanks until they are two-thirds full so that the remaining one-third can be added as Armagnac (this is called “mutage”). This blend is kept in tanks for a few months before being released on March 15 of the third year.
