Viticulture

Sustainable. No systematic fertilization, grass cover, minimal use of pesticides, single Guyot pruning.

Grape harvest

Mechanically harvested at optimal aromatic maturity, grapes are crushed and destemmed then placed in vats.

Wine making

Fermentation in temperature-controlled stainless steel vats at around 25°C. The duration of maceration (15 to 25 days) will be determined based on the vintage and the potential of each plot. Tasting is the sole judge. Regular racking will provide the oxygen necessary to blend the tannins of the wood and the wine.

12 months in vats with regular racking to provide the oxygen necessary for the tannins to develop
