Cérons
The smallest appellation in the Gironde, Cérons is a French white wine with a Protected Designation of Origin (AOP) produced around Cérons in the Graves wine region, one of the subregions of the Bordeaux wine region. Its production area borders that of Sauternes.
The grapes must be overripe and harvested in successive passes. The must must contain at least 212 grams of sugar per liter, and the wines must have a minimum alcohol content of 12.5% by volume.
The wines are refined and elegant but do not reach the concentration of Sauternes: they are lighter and more lively. They can be aged for 5 to 15 years.
The Cérons appellation covers the communes of Cérons, Illats, and Podensac. The vineyards are located on the left bank of the Garonne River, in the Gironde department, about thirty kilometers southeast of Bordeaux. The Cérons appellation area forms an enclave within the Graves appellation.
This vineyard comprises approximately 30 hectares under production.
Cérons wine may only be produced from the Sémillon, Muscadelle, and Sauvignon grape varieties.
