“A Cérons in all its glory: fresh and well-balanced”

The 2018 vintage tested the team’s patience. The first six months of the year were marked by incessant rain and mild temperatures. On July 15, the vintage took a 180-degree turn with a very hot summer marked by drought. The harvest lasted from late August to late October, with the grapes reaching excellent ripeness. The exceptionally long harvest period without rainfall allowed us to harvest on a case-by-case basis. In the cellar, the juices are very consistent and have a beautiful color. It is therefore a unique vintage that, despite the extreme conditions, stands in the tradition of the great vintages.

Clay-gravel soils, with limestone subsoils containing marine asterias. The 35-year-old vines grow on a limestone plateau overlooking the village

Grape Harvest

Harvested exclusively by hand in successive passes. The grapes are picked after they have overripened and been gradually infected by Botrytis cinerea, the fungus responsible for the natural concentration of the grapes (noble rot). The botrytised berries are mostly harvested at the “roasted rot” stage to achieve the aromatic balance and characteristic freshness of Cérons wines

Winemaking

Very slow pressing in gradually increasing stages, followed by the extraction of skin-derived aromas. Settling, then transfer to barrels, and initiation of natural fermentation in barrels

Livestock farming

Aged in barrels for 2 to 3 years

Very fruity, with notes of apricot, peach, lemon zest, and candied orange

Bright yellow with green highlights. The nose is elegant, with subtle fruit notes—apricots, peaches, lemon zest, and candied orange peel in the background—along with hints of vanilla. The palate is well-structured, with good tension and excellent length.
