Joined in 2009 by his son Benjamin, Michel Colbois has been based in Chitry-le-Fort since 1970. His white wines, whether Chardonnay or Aligoté, often feature prominently in the Guide.
This Chablis is beautiful, with its golden color and brilliant highlights. But above all, it is very good, according to the jury members, who made it the champion of its category. The nose is very refined with its mineral freshness, iodine notes, and aromas of white flowers. The palate is straightforward and pure, revealing a minerality that marries well with the fruit and well-integrated oak. A wine for immediate enjoyment.

About wine:
A Chablis from fifty-year-old vines in the Chitry area, vinified with indigenous yeasts (a rare thing in Chablis!) and aged for 12 months in barrels. The result is a white wine with generous aromas of yellow fruit and brioche, a fairly full palate, and a rich finish. It can be enjoyed now.

Beautiful color, good balance between acidity and fruit; Typical Chablis. Best served at around 55°F, develops well in the glass. Optimum drinking window: in 6 to 9 months?
