Joined in 2009 by his son Benjamin, Michel Colbois has been based in Chitry-le-Fort since 1970. His white wines often rank highly in the Guide, whether made from Chardonnay or Aligoté.
This Chablis is a beauty, with its golden hue and brilliant highlights. But above all, it is very good, according to the jury members, who named it the champion of its category. The nose is full of finesse, with mineral freshness, iodine notes, and aromas of white flowers. The palate, clean and pure, reveals a minerality that complements the fruit and well-integrated oak. About the wine:

A Chablis made from fifty-year-old vines in the Chitry area, fermented with native yeasts (a rarity in Chablis!) and aged for 12 months in barrels. The result is a white wine with generous aromas of yellow fruit and brioche, a fairly full-bodied palate, and a rich finish. It’s ready to drink now.

Beautiful color with a nice balance between acidity and fruit; Classic Chablis style. Best served at around 13°C; develops nicely in the glass. Expected peak: in 6 to 9 months?

Surprisingly enough, this Chablis has a distinct character, with a pleasant acidity on the palate but a barely perceptible richness.
