Joined in 2009 by his son Benjamin, Michel Colbois has been based in Chitry-le-Fort since 1970. His white wines often rank highly in the Guide, whether they’re made from Chardonnay or Aligoté.
This Chablis is beautiful, with its golden color and brilliant highlights. But above all, it’s excellent, according to the jury members, who named it the champion of its category. The nose is full of finesse, with mineral freshness, iodine notes, and aromas of white flowers. On the palate, it’s crisp and pure, revealing a minerality that complements the fruit and well-integrated oak. A wine that delivers immediate pleasure.

About the wine:
A Chablis made from 50-year-old vines in the Chitry area, fermented with native yeasts (a rarity in Chablis!) and aged for 12 months in barrels. The result: a white wine with generous aromas of yellow fruit and brioche, a fairly full-bodied palate, and a rich finish. It’s ready to drink now.

Beautiful color, with a nice balance between acidity and fruit; Typical of Chablis. Best served at around 13 degrees; it opens up nicely in the glass. Expected peak: in 6 to 9 months?

Surprisingly enough, this Chablis has a distinct character, with a rather pleasant acidity on the palate, but a barely perceptible richness.
