Bailly Lapierre

The Bailly Lapierre winery, founded in 1972 by winemakers from the Auxerrois region, is considered the historic birthplace of the Crémant de Bourgogne AOC. Housed in a former limestone quarry that has been in operation since the Middle Ages, the cellars carry on a unique tradition of crafting sparkling wines using the traditional method. Today, this collective endeavor brings together several hundred winemakers committed to showcasing the Burgundian terroir.

Located in Saint-Bris-le-Vineux, near Auxerre in the Yonne Valley, theBailly Lapierrecellarsbenefitfrom exceptional natural conditions thanks to their underground galleries, more than 50 meters below ground. The constant temperature of 12 °C and natural humidity provide an ideal environment for aging Crémants. The wines are crafted from the great Burgundian grape varieties, notably Pinot Noir, Chardonnay, Aligoté, and Gamay, which fully express the richness of the Kimmeridgian soils of the Auxerrois region.
