The Bailly Lapierre winery, founded in 1972 by winemakers from the Auxerrois region, is considered the historic birthplace of the Crémant de Bourgogne AOC. Housed in a former limestone quarry that has been in operation since the Middle Ages, the cellars carry on a unique tradition of crafting sparkling wines using the traditional method.
