Harvested by hand into 10-kg crates and transported from the vineyard using wheelbarrows to prevent the grapes from being crushed before they reach the winery

Winemaking

The grapes are sorted on a vibrating sorting table, destemmed, and then vinified traditionally in open tanks (4–5 g/hl SO₂). No yeast is added, and the musts undergo cold pre-fermentation maceration for 5 to 10 days, for a total fermentation period of 15 to 21 days.

Livestock farming

The wines are aged in barrels for 12 months on the fine lees from alcoholic fermentation and undergo malolactic fermentation in the barrels. To preserve the wines’ aromatic profile, aging takes place under reducing conditions on the lees; therefore, no racking is performed.

About the estate:

Clos Salomon, a 7-hectare monopole, has borne the name of its owners since the 14th century and is managed by their descendants, the du Gardin family. Ludovic du Gardin is the steward of this prestigious vineyard, which he cultivates using organic methods: the vines are meticulously tended without herbicides or insecticides, and the soil is plowed. The wines are aged for 12 months and show good aging potential. In addition to the Clos Salomon, with its distinct terroir, two Chardonnay cuvées are available: a Montagny Le-Clou and a Givry Premier Cru La-Grande-Berge. The estate is one of the few areas to have suffered frost damage in 2017, which resulted in more concentrated wines due to low yields.

About the estate:

The estate owes its name to the Salomon family, who acquired it in 1538 and passed it on, a little less than a century later, in 1632, to the Gardin de Séveirac family. Since 2016, it has been managed by Ludovic du Gardin. The vineyard consists of a single plot—a historic monopole producing Givry Rouge Premier Cru—supplemented by two Chardonnay parcels: La Grande Berge, a Givry Premier Cru (0.40 hectares), and 2 hectares in Montagny. With low yields, careful cultivation, and respect for the soil, every effort is made to bring out the best expression of the terroirs. Once again this year, we commend the winery for its consistency.
