Stéphane Aladame 's vineyardis managed using sustainable and organic methods: work is carried out with respect for the soil and terroir, where the use of chemical fertilizers is prohibited in order to obtain healthy, high-quality grapes with moderate yields. The grapes are harvested by hand and then vinified in the most natural way possible, without the use of yeast or enzymes.
