"A cider of exceptional refinement!"

This "Vendange Tardive" is comparable to the great sweet wines of Sauternes, with a high residual sugar content. Here, it is a question of taking one's time to obtain the most concentrated juice possible: late apples dried for two months, slow pressing (24 hours) and six months' fermentation in oak barrels. Great finesse of bubbles and aromatic complexity.
