"A cider of exceptional refinement!"

This "Vendange Tardive" is comparable to the great sweet wines of Sauternes, with a high residual sugar content. The key here is to take all the time necessary to obtain the most concentrated juice possible: late-harvest apples left to dry for two months, slow pressing (24 hours), and six months of fermentation in oak barrels. It features exceptionally fine bubbles and aromatic complexity.

I was very disappointed with this Carpe Diem, which I’d been searching for for a long time. I served it with dessert at Christmas, and all the guests agreed that it’s a cider that’s a bit sweeter than a “doux” cider but with a slight bitterness in the finish, finer bubbles, and certainly a nice color—but absolutely nothing extraordinary. Some people even describe it as a “Sauternes”-style cider!! A sweet cider is just as good, if not better. I’m very, very disappointed with this tasting.
