Whole harvest (30%), 10% of the grapes undergo "apassimento" (the bunches are left to dry in a ventilated room for around ten days) followed by fermentation/maceration for six weeks. A small proportion of older vintages are incorporated into the blend.

The Grenache Besson Vineyard Old Vines 2023, which bears the Central Coast appellation, comes from a corner of the Santa Clara Valley, not far from Santa Cruz. Highly concentrated in the cool climate, it offers layers of wild strawberries, crushed white pepper, and chalky tannins, with a chewiness that reflects its youth. It may need more time in the bottle (and in the glass) to unfold its full potential; best enjoyed between 2025 and 2030.
