Ferme d'Hotte
La Ferme d'Hotte is a family-run cidery operated by Gérard and his son Théo. Located in the Pays d'Othe region, between Champagne and Burgundy, La Ferme d'Hotte spans 20 hectares of orchards, divided into six plots.
La Ferme d'Hotte processes apples with the utmost respect for tradition: picked at full ripeness (when they fall to the ground), the apples are pressed within 24 hours of harvest. Like Champagne wines, La Ferme d'Hotte’s ciders undergo a second fermentation in the bottle with regular riddling.
