A beautiful autolysis and a rich, indulgent palate of almond blossoms and candied zest, paired with a lively yet delicate effervescence, hit the mark. As is often the case with this house’s champagnes, this cuvée calls for fine dining: it’s easy to imagine a blue lobster grilled over binchotan charcoal, served with a few broad beans and peas, and a shell juice.

A blend of 45% Pinot Noir, 33% Chardonnay, and 22% Pinot Meunier, the Paillard NV Extra-Brut Première Cuvée offers an elegant, fresh bouquet with aromas of citrus oil, lemon, spring flowers, pomelo, and hints of pastry. Medium-bodied to full-bodied, crystal-clear, and vibrant, it is complemented by a delicate mousse and a chalky finish. Best enjoyed within the next three years.

About the estate:
“Since its founding in 1981, its founder and longtime manager, Bruno Paillard, has continued to juggle numerous responsibilities, including serving as CEO of the Lanson-BBC Group. He is now supported by his daughter Alice, who passionately oversees relations with the vineyards—some of which are still entirely organically farmed, adhering closely to organic principles without seeking certification. For the past two years, we have been delighted to rediscover this house and the spirit of its aromatic, expressive cuvées, supported on the palate by fine acidity and delicate bubbles. The disgorgement dates are listed on the back labels. We award it its first star.”
