distinctly citrus aromas (lime, grapefruit) enhanced by white flowers. On aeration, hints of almond and bread crust emerge.

About the wine:

This wine merchant is the most recent of the great houses. A descendant of winegrowers, Bruno Paillard founded it in 1981 with the ambition of exporting top-of-the-range cuvées. Two decades later, 75% of the champagnes produced in the ultra-modern winery are exported. All cuvées include at least 20% barrel-fermented wines, and their dosage is measured. This one offers all the distinction expected of a pure Chardonnay. It has been produced "en petite mousse": fine bubbles rise from its clear color. "Since its creation in 1981, founder and still manager Bruno Paillard has continued to pursue a wide range of activities, including that of CEO of the Lanson-BBC group. He is now supported by his daughter Alice, who passionately oversees relations with the vineyard, part of which is still entirely under cultivation, moving closer to the organic ethic without claiming certification. For the past two years, we've been delighted to come back to this house and the spirit of its aromatic, expressive cuvées, underpinned on the palate by fine acidity and delicate bubbles. Disgorgement dates are indicated on the back labels. We give it its first star.
