Raisins passerillés (déshydratés) récoltés dans des paniers nommés "puttonyos", forment un moût très compact nommé "aszu" qui est assemblé à un jus fraîchement pressé. La macération débute. 5 puttonyos signifie que l'on ajoute 5 paniers de raisins passerillés ce qui donne le taux de sucre.
