“There’s a lot of foam at first, which takes a while to subside, allowing the lovely aromas of lemon and lemon blossom to emerge from the glass. There are also notes of licorice-tinged chalk. On the palate, it’s quite dense; the chalky notes transform into fresh cream, and the lemon is absorbed into the creamy, mineral texture, with enough effervescence to keep it lively.
