After an initial selection in the vineyards, a second selection takes place in the winery prior to destemming, followed by lot-by-lot pressing in open-top barrels, fermentation with natural indigenous yeasts for up to two weeks, 6–8 daily manual punch-downs and pump-overs, maceration on the skins for an additional week, and malolactic fermentation in old barrels

About the wine:

Colore is made from old vines located in the hills of Chianti Classico, in Lamole and Olmo. “Colore has been my dream ever since I started working with old vines... The Lamole vineyard is magnificent; it is THE vineyard of Chianti Classico,” explains Bibi Graetz. 2022 was a hot year, so Bibi decided to use only the fruit from his north-facing vineyards. “This hot year has given me this material, even though it’s at high altitude and north-facing; the fruit has that punch. ” Precisely crafted and highly intense, Colore 2022 is both mellow and lively. Black berries, spices, and blood orange come together in a lingering, tangy finish. It is more closed than the Testamatta at the moment, but should reveal more of its beauty with time. 2025–2045

A ruby color reminiscent of a jewel, translucent, though slightly deeper than some vintages. A captivating wine that captures all its juiciness and delicacy even in the heat of 2022. Of medium intensity, it reveals aromas of raspberry and ripe red fruits, well-balanced, intense, with a touch of orange peel, rosemary, tobacco, white tea, pomegranate, cherry pit, cut herbs, and undergrowth—flavorful but with a finish of sweet red licorice; I love it. Perfect balance—and here we are right in the heart of the lively Tuscan pleasure of owner and winemaker Bibi Graetz.
