Wine making

The harvest is received in a stainless steel tank with a drainer to separate the juices, followed by pneumatic pressing with maceration under controlled atmosphere (nitrogen) and temperature. Settling takes place after refrigeration at 10°C, followed by fermentation regulated between 14° and 18° with selected yeasts. No malolactic fermentation is carried out.
