Tasted blind. Its aroma is exactly like that of the perfectly ripe, honey-scented plums I’ve been cooking over the past few weeks. An absolutely magnificent aroma—so good that you could get lost in it and forget to taste the wine! A fantastic texture, interwoven with herbaceous aromas and a vegetal freshness: the freshness and sweetness of mint, the texture of mint leaves; the sweetness of chamomile and the texture of chamomile petals. Caraway and cumin, honey and baked apples, fennel and wild apples. There is so much going on here. Wow.
