Destemming. Alcoholic fermentation lasted 20 days at a temperature between 25°C and 30°C. A vigorous, aerated pumping-over was performed midway through alcoholic fermentation. Other pumping-overs were very light, lasting only 5 minutes each day. Total vatting time was 30 days.

About the estate:

Laurent Calmel, an oenologist, teamed up with Jérôme Joseph to found a wine merchant firm in 1995 that specializes in regional wines from the Languedoc-Roussillon. The duo launched their own label in 2007. They select the vineyard plots, vinify the grapes, and age the wines.
