Wine making

Pressing in small pneumatic presses, 100% fermentation in new barrels. After light settling, the wine ferments naturally at 20°C.

10 months on fine lees in 225L barrels with regular stirring

A wine that surprisingly reminded me of a Burgundy on the nose, but on the palate you can tell you're definitely in the South. It's a very fine Southern white, excellent on the day it's opened, but completely flat and lifeless the next day, despite being pumped.
