The Hérault department undoubtedly offers the greatest variety of wines with Protected Geographical Indication (PGI) status, which account for nearly two-thirds of the production area. Wines from the Hérault department may thus be covered by the Vin de Pays d'Oc appellation, which supersedes the Vin de Pays de l'Hérault appellation. Within this department, there are also smaller areas to which a decree has granted specific PGIs, such as Val de Montferrand, Mont Baudille, Monts de la Grage, Coteaux d’Enserune, Coteaux du Libron, Coteaux de Murviel, Coteaux de Laurens, Côtes de Thongue, la Bénovie, Cassan, Coteaux du Salagou, etc.

The wines offered under the Vin de pays de l'Hérault appellation are produced from traditional Mediterranean grape varieties such as Carignan, Syrah, Cinsault, and Grenache for reds, but also include other varieties, notably Merlot and Cabernet Sauvignon. For white wines, the Vin de pays de l'Hérault appellation includes Grenache blanc, Maccabeu, and Terret, as well as Chardonnay, Sauvignon, and Viognier. The Vin de pays de l'Hérault appellation offers wonderful wines to discover, such as those from Domaine Mas Cal Demoura, Domaine Les Clos du Serres, Domaine Mas de Daumas Gassac, Mas Julien, and Domaine du Pas de l'Escalette.
