The grapes are harvested when slightly overripe.

Wine making

The grapes are harvested when slightly overripe, destemmed, and then fermented. Gentle, high-quality extraction takes place during daily pumping over at a controlled temperature. Daily tasting allows us to determine when post-fermentation maceration is complete.

Livestock farming

Aged in new French oak barrels for 12 months for 10% of the cuvée.

Eye

Very deep color, almost black

Nose

The nose offers aromas of garrigue and spices, with subtle woody notes.

Mouth

The palate is warm, full-bodied, and velvety. Pronounced tannins are counterbalanced by subtle acidity. Beautiful complexity. A great wine, subtle and perfectly balanced.

Overpowering alcohol sensation and candied fruit aromas, reminiscent of a Gigondas or other southern Rhône wine. Tastes better the next day, but the first impression is a little disappointing.
