Grape harvest

The three grape varieties are harvested separately according to ripeness and tasting.

Wine making

Fermentation begins after a short maceration of each grape variety, followed by 15 days of vatting accompanied by daily punching down or pumping over. Fermentation takes place at a controlled temperature between 26°C and 30°C. Final blending takes place after tasting.

About wine:

Tasted as a barrel sample, the 2015 Cuvée Spéciale Minervois marks a further step forward from 2014 (which is nothing to be ashamed of) and offers deeper, richer notes of black raspberries, blackcurrants, crushed flowers, and violets. Medium-bodied to full-bodied, pure, concentrated, and elegant, it certainly has exceptional potential and should be a beautiful wine and a rock-bottom value.
