A superb aperitif, whether served with or without foie gras. It pairs surprisingly well with poultry or creamy white meats, and even better with fish (monkfish, John Dory, etc.) in wine-and-cream reduction sauces. It also makes a classic accompaniment to warm pear tarts. It pairs wonderfully with Roquefort and other blue-veined cheeses.
