Food and Wine Pairings
A superb aperitif, with or without foie gras. It pairs surprisingly well with poultry or white meats prepared in a creamy sauce, and even better with fish (monkfish, John Dory, etc.) in reduced wine-and-cream sauces. It also makes a classic pairing with warm pear tarts. It pairs wonderfully with Roquefort and blue cheeses.
