About the wine:
It was harvested at full ripeness, underwent spontaneous fermentation, and was bottled with residual sugar, so that the secondary fermentation in the bottle is driven by these natural sugars. “Triple zero” means that there was no chaptalization of the base wines, no addition of sugar to initiate the secondary fermentation, and no dosage. The golden color reflects slight aging; the nose bursts with the intense aroma of ripe yellow apples characteristic of Chenin Blanc, both cooked and fresh. The palate continues this theme of round, mellow apple flavors—clean, bone-dry, and fresh, with expressive and briny notes. It is a table wine with a lingering, smooth finish.
