Destemming and gentle crushing at 7–8°C to prevent oxidation. 90% free-run juice, 10% press juice. No maceration. Alcoholic fermentation in new and second-year 600-liter demi-muids. Stirring in the Burgundian style twice a week for 10 months.

About the estate:

This estate has been owned since 2006 by Sacha Lichine, the former owner of Château Prieuré-Lichine in Margaux. He has taken a hands-on approach to winemaking, working with Patrick Léon (formerly of Mouton-Rothschild) to produce wines of exceptional quality. Their Garrus cuvée is likely the most expensive Provence rosé on the market.

About the estate:

A renowned match manufacturer in Marseille during the 1850s, Joseph Toussaint Caussemille was one of the many owners of Château d'Esclans and gave his name to this estate, which is dominated by a 19th-century building inspired by Tuscan villas and built on the ruins of a medieval castle. Sacha Lichine, son of the late Alexis Lichine, former owner of Château Prieuré-Lichine, took over this 267-hectare estate (including 44 hectares of vineyards) in 2006; it is renowned for its oak-aged rosés.
