Winemaking

Most of the grapes are destemmed and placed in vats without added SO2. Fermentation lasts for a relatively long period (5 to 8 weeks) at a temperature of 22–30°C, with gentle extraction and regular stirring of the lees. After pneumatic pressing, the free-run wine and press wine are blended depending on the vintage. This is a natural, unfiltered wine.

A harmonious blend of aromas centered on ripe yet crisp red and black berries, caramelized licorice, and slightly waxy Mediterranean spices

Palate

A smooth, elegant attack, with a fresh structure underpinned by subtle, velvety tannins. Aromatic persistence on the mid-palate, with notes of undergrowth and complex mineral earthiness. The finish offers a lovely sweetness that remains perfectly balanced with the wine’s freshness and the fine texture of the grapes.

The 2021 Châteauneuf-du-Pape (80% Grenache, with the remainder split equally between Syrah and Mourvèdre) is charming, featuring ripe red and blue fruits along with peppery garrigue and subtle Provençal notes. Ripe, medium-bodied to full-bodied, with a lovely texture on the palate and supple tannins, it will shine right from the start.
