Destemming, then sorting on an optical sorting table. After cold maceration for 2-3 days, fermentation for 15 to 20 days, extraction mainly by punching down.

60% in Burgundy barrels (50% of which are new) and 40% in vats for 18 months. Final selection of the best wines to define the final blend, followed by an additional 10 months of mass aging before bottling.

About the estate:

Mont-Redon is a vast estate covering around 100 hectares of vineyards in Châteauneuf (out of a total of 150 hectares planted), occupying a large part of the plateau of rounded pebbles that bears the estate's name, as well as a section planted opposite the estate. Alongside the long-standing unique Châteauneuf red cuvée, a superb single vineyard selection, Le Plateau, has been created. Although never considered one of the most spectacular wines of the appellation, this vintage ages very well and imposes its quiet fullness. The family also produces quality whites, numerous Côtes-du-Rhône wines, and owns a property in Lirac.
