Winemaking

Direct pressing followed by skin contact for a few hours. The juice is left to rest for 24 hours in a cool place. Fermentation at a low temperature (18°C) in tanks to preserve all the fruit aromas, then raised to 20°C at the end of fermentation to develop the wine’s body and structure. Malolactic fermentation halted to preserve freshness. Stirring performed once a week for 3 months.
