Wine Making

Direct pressing with skin contact for a few hours. The juice is left to rest for 24 hours in a cool place. Fermentation takes place at a low temperature (18°C) in tanks to preserve all the fruit aromas, then the temperature is raised to 20°C at the end of fermentation to develop the wine’s body and structure. Malolactic fermentation is halted to preserve freshness. Stirring is performed once a week for 3 months.

A pleasant surprise. A well-balanced white wine, very fresh and even refined, with mineral and peach aromas. Its slight richness and lemony flavor were a perfect match for a tartiflette made with Reblochon IGP.
