Syrah grapes were harvested whole in mid-September along with the white grapes, followed by long cold maceration with limited extraction. Grenache and Mourvèdre grapes were added at the end of fermentation, followed by cold pressing and malolactic fermentation.

Livestock farming

Approximately 20% in barrels to refine the Syrah, the rest in truncated cone-shaped wooden and concrete vats, 3 standard rackings under inert gas before final blending.

Nose

A very indulgent fruitiness with notes of sweet spices, blueberries, and black cherries on a peppery and herbaceous base with hints of garrigue.

Mouth

Dense, full-bodied, and supple in texture, it opens with blueberries and black cherries, followed by spices, savory, fresh, and a silky finish.

As always with Xavier Vignon, this wine reaches its peak after 24 hours of opening, when it truly reveals itself. Lots of red fruit and subtle hints of spice accompany a round, supple, and flavorful palate.
