Traditional tillage. No herbicides used. Pesticide use is kept to a minimum and has been organic since 2011. Certified organic fertilizers.

Wine Production

Crushed and destemmed grapes. Grenache and Syrah are fermented separately using indigenous yeasts. Fermentation takes place at low temperatures, with 2 to 4 rackings at the very beginning of fermentation, minimal pumping over, and post-fermentation maceration at warm temperatures. The vatting period lasts approximately 30 days. Aging on fine lees, partly in wooden tanks and partly in concrete tanks.

Livestock Farming

12 to 18 months, 50% in truncated-cone wooden vats and 50% in concrete vats.

Palate

Fresh and fruity, with notes of cherry and strawberry. Beautiful structure with fine, silky tannins. A lovely, lingering finish that highlights its freshness and finesse.
