Surrounded by a talented team, Germain Croisille embodies Cahors’s renaissance with a modern approach that has moved away from the use of new oak. The wines, certified organic, have gained in finesse, approachability, depth, and expression of terroir. Today, they have reached a remarkable level of quality, with a fresh and distinctive style. A superb vintage this year—every wine is excellent and of unparalleled purity.

A lovely wine aged for 18 months in large oak casks, offering enticing aromas of stewed red berries, raisins, and kirsch, complemented by balsamic notes. On the palate, it is full-bodied, rich, and robust, with firm tannins and aging potential. A wine with character that would pair beautifully with spicy dishes.

The appellation has seen a new generation of winemakers, passionate about the Malbec grape, take the region by storm. Without turning their backs on the great Cahors wines of yesteryear—which age with unflinching character—Cahors’ new winemakers craft the grapes in such a way that they offer an intensely floral profile. Germain Croisille, who has transformed the estate founded by his parents, has mastered the technique to the point of producing wines of rare subtlety, while remaining true to the traditional style of Malbec from the Causse. Subtle extraction and deep ripeness characterize wines that are ready to drink now yet capable of aging.
