Skin contact for 6 to 10 hours for Ugni Blanc and Sauvignon Blanc; direct pressing for Gros Manseng. A meticulous pressing process: use of an Inertys press (under total nitrogen inerting), followed by low-temperature fermentation (16–18°C) in temperature-controlled stainless steel tanks

In stainless steel tanks, on fine lees, with weekly stirring for the first two months, then every two weeks until the final blending in the spring

About the estate:

Philippe Fezas has been tending to his vineyards since 1995, the year he took the plunge and added the role of winemaker to his position as a consultant for Seguin-Moreau. Committed to producing expressive wines sold to wine shops and fine restaurants, he carefully plans his vineyard layout, bucking the trend of surrounding production. His two slopes face the Pyrenees and feature a variety of soils ranging from fine clay (the Côte d’Heux) to more calcareous soils (white earth).

About the estate:

As the heir to four generations of winemakers who have been based here since 1893, Philippe Fezas looks out from his 50-hectare estate at the small 13th-century church in the nearby hamlet of Heux. A gentle breeze, the chiroula, blows through the rows of vines, drying the grapes that will yield exceptional flocs, Armagnacs, and Côtes de Gascogne. A sure bet.
