The grapes are cooled in a cold room, then transferred to oval concrete tanks; spontaneous alcoholic fermentation takes place with partial and whole clusters (65%); gentle pumping-over (2 to 3 times a day); the skins are pressed, and the wine is then transferred by gravity to traditional Austrian oak casks and demi-muids for aging

The Boekenhoutskloof 2022 Swartland Syrah is made from 60% whole grapes, with the remainder destemmed. It is aged in Stockinger casks for 18 months. The Syrah is planted on a cool hillside, and this wine displays crisp aromas of purple and blue fruits, supported by a vibrant primary intensity. It caresses the palate with a refined and smooth style, yet lacks neither power nor depth. A long, slow malolactic fermentation is allowed, which gives the wine more tension. The Swartland Syrah tends to become fuller-bodied and more complex with age. Let this bottle age for a few years in your cellar. 2025–2037
