About the wine:
The 2021 Hunter Valley Shiraz is a bit closed upon opening, but it opens up with a little swirling. It offers notes of black pepper, pink pepper, plenty of fresh and spicy acidity, sumac, iodine, poached strawberries, and star anise. The acidity has a nettle-like flavor that I find very pleasant, but I think what this wine really needs is a little air. If you can let it breathe a bit—either in your glass or in a decanter—I think the wine will be even more enjoyable. It has lovely fruit, but it’s still quite lively at the moment. 13.5% alcohol, screw cap. 2023–2033
