Wine Production

Slow fermentation at low temperatures, followed by several hours of maceration to extract the maximum amount of aromas through cold maceration, settling, and alcoholic fermentation at low temperatures using only indigenous yeasts. Once fermentation is complete, the fine lees are retained and stirred regularly to coat the wine on the palate.
