Wine Making

Fermentation takes place in temperature-controlled stainless steel tanks at around 25°. The duration of maceration (15 to 25 days) is determined based on the vintage and the potential of each plot. Tasting is the sole criterion. Regular racking provides the oxygen needed for the tannins from the wood and the wine to blend.
