“The vintage of fullness—a wine for contemplation!”

1988: a warm but very wet spring, with late flowering; by July, the situation had turned around and the weather was ideal. The harvest, which began late in mid-October, continued through All Saints’ Day—the time needed for the berries to to continue developing steadily and uniformly and to reach full maturity without stress; in the end, 6 selections of very high quality. 88: a wine full of richness and a true classic of its kind. - Delivery in a wooden case is available for orders of 1 bottle of this wine (depending on the country and shipping method selected)

Grape Harvest

Harvested exclusively by hand in successive passes. The grapes are picked after they have overripened and been gradually infected by Botrytis cinerea, the fungus responsible for the natural concentration of the grapes (noble rot). The botrytised berries are mostly harvested at the “roasted rot” stage to achieve the aromatic balance and characteristic freshness of Cérons wines.

Winemaking

Very slow pressing in increasing stages to extract skin aromas. Settling, then barreling and start of natural fermentation in barrels.

Livestock farming

Aged in barrels for 2 to 3 years

A lovely coppery color, clear and bright with golden highlights

Nose

A refined and complex nose, with notes of white honey and citrus

Palate

Aromas of well-integrated candied orange peel and a lovely freshness characterize this vintage, which is over 30 years old and bursts with the distinctive bitterness so characteristic of Cérons wines. The finish is taut and refined, with extremely delicate notes of sweet spices. A wine for contemplation.

Between 9° and 19°! Keep refrigerated for up to 3 weeks after opening.
