" Top Value! It is quite similar to "Cloux," except that it is significantly spicier. Once again, the flavors are very rich and dense on the mid-palate, offering an appealing mouthfeel, enveloped in a slightly more complex finish with a hint of bitter lemon. A beautiful wine that is well worth trying. (89-92)/2022+" (Burghound - Allen Meadows 2018) Utterly seductive!

Wine rated (2020 guide) 15/20 (Very good wine)
Winery rated 1*Star (A serious, recommendable production, consistent with what one would expect from its appellation(s))
About wine:
Ripe yellow fruit, minty freshness, all coming together in a harmonious and classic blend.
About the estate:
The Jaeger-Defaix estate covers 6 hectares in Rully, including 4.5 hectares of premier cru vineyards, certified organic since 2012. Hélène Jaeger-Defaix, an agricultural engineer and oenologist, wife of Didier Defaix (Bernard Defaix estate in Chablis), is at the helm. A viticulture where the soils are plowed and vinification respects the harvest as much as possible in order to let the plots express themselves is beginning to pay off. The 2017 vintage was at its best, with wines of a classic and refined style.

About wine:
The first vintage is mineral and fruity on the nose, round and generous on the palate, supported by a pleasant woodiness.
About the estate:
Wife of Bernard Defaix, a winegrower in Chablis, Hélène Jaeger took over her great-aunt Henriette Niepce's vineyard in 2005. She immediately began the process of converting to organic farming (certification in 2009).

About the estate:
Hélène Jaeger first took over a plot of Rully Premier Cru in 2002 that had belonged to her great-aunt Henriette Niépce, a descendant of the famous inventor, then the entire estate in 2005. Married to Bernard Defaix, a winemaker in Chablis, she applies the principles of great wines, with worked soils and manual harvesting. The vintages are vinified at the Chablis winery, which has all the necessary equipment; the white wines are aged in barrels.
