Best known for its whites, Rully has some excellent reds in store. Here we are in the Chapitre appellation (just below Les Cloux) on a beautiful plot, completely surrounded by a high wall. A vineyard that is very typical of the region, producing a Pinot Noir that is also very Burgundian in character—refined and distinguished. It offers fruit, elegance, and a structure that ensures good aging potential.

About the estate:
The Jaeger-Defaix estate spans 6 hectares in Rully, including 4.5 hectares of Premier Cru vineyards, and has been certified organic since 2012. Hélène Jaeger-Defaix, an agricultural engineer and oenologist and the wife of Didier Defaix (of the Bernard Defaix estate in Chablis), is at the helm. A viticultural approach that involves plowing the soil and winemaking practices that respect the harvest as much as possible—with the goal of allowing the individual plots to express their full potential—is beginning to pay off. The 2017 vintage has shown itself to be at its very best, with wines of a classic and refined style.

About the estate:
Hélène Jaeger, the wife of Bernard Defaix, a winemaker in Chablis, took over the estate of her great-aunt Henriette Niepce in 2005. She began the transition to organic farming shortly thereafter (certification in 2009).

About the estate:
In 2002, Hélène Jaeger first took over a plot of Rully Premier Cru that had belonged to her great-aunt Henriette Niépce—a descendant of the famous inventor—and then the entire estate in 2005. Married to Bernard Defaix, a winemaker in Chablis, she applies the principles characteristic of great wines, with carefully tended soils and hand-harvested grapes. The wines are vinified at the Chablis winery, which is fully equipped; the white wines are aged in barrels.

About the wine:
The peppery aromas of blackcurrant liqueur, poached plum, earth, and a hint of kirsch are ripe yet fresh. The vibrant, medium-bodied flavors once again display excellent volume and reasonable richness, culminating in a firm, lingering finish that lingers on the palate. This wine will certainly need at least a few years of aging, as it is currently quite compact. 2030+
