Champagne Ghislain Payer et Fille - Brut Réserve
2*Étoiles
Hachette
“A well-balanced Champagne that remains consistent year after year, offering superb value for money! A truly delightful, fruity treat.”
“This champagne, which has already been honored by the Guide, blends the three Champagne grape varieties in proportions that vary slightly depending on the cuvée (for this one: 50% Meunier, 35% Chardonnay, 15% Pinot Noir). Subtle on the nose, with slightly vegetal and smoky notes, it reveals a bold personality on the palate. Intense, frank, rich, and complex, it combines honeyed aromas with the freshness of hints of verbena and mint.” (Le Guide Hachette 2025).

About the wine:
This champagne, which has already been recognized by the Guide, blends the three traditional Champagne grape varieties in proportions that vary slightly depending on the cuvée (for this one: 50% Meunier, 35% Chardonnay, 15% Pinot Noir). Subtle on the nose, with slightly vegetal and smoky notes, it reveals a bold personality on the palate. Intense, straightforward, rich, and complex, it combines honeyed aromas with the freshness of hints of verbena and mint.
About the estate:
Winegrowers since 1854, based in a small valley near the Marne Valley, the Payers are proud to be among the twenty-four founders of the Coopérative régionale des vins de Champagne in 1962 (see Jacquart, de Castelnau), which still produces two of their cuvées, even though they have since become independent producers. In 2019, Ghislain Payer passed the 4-hectare vineyard on to his daughter Élise.

Subtle, pleasant nose. Fine bubbles and a fresh, creamy, honeyed palate with nice balance, though a bit short on the finish. Good value for the price, very nice as an aperitif...and a pretty label ????

A rather full-bodied champagne with great finesse. Perfect as an aperitif.
