This champagne, which has already been recognized by the Guide, blends the three Champagne grape varieties in proportions that vary slightly depending on the cuvée (for this one: 50% Meunier, 35% Chardonnay, 15% Pinot Noir). Subtle on the nose, with slightly vegetal and smoky notes, it reveals a bold personality on the palate. Intense, clean, rich, and complex, it combines honeyed aromas with the freshness of hints of verbena and mint.

About the estate:

Winegrowers since 1854, based in a small valley near the Marne Valley, the Payers are proud to be among the twenty-four founders of the Coopérative régionale des vins de Champagne in 1962 (see Jacquart, de Castelnau), which still produces two of their cuvées, even though they have since become récoltants-manipulants. In 2019, Ghislain Payer passed on the 4-hectare vineyard to his daughter Élise.
